The honey drips you see 🍯 are not candy melts or chocolate, it’s actually melted Swiss Buttercream!!! I really wanted to match the bottom buttercream border perfectly with the honey drips, so I took some of the same colored Swiss buttercream and microwaved it for 5 seconds, stirred until it had a nice thick viscosity and poured it into a piping bag to use as drip! My Top 3 tips for cut out cookies before they even go into the oven: 1.) Careful how many times you re-roll your dough. You can re-roll cookie dough up to 2x before it starts to change the shape of your cookies when baking! If you’re getting weird bubbles and shrinkage…odds are you may have re-rolled your dough one too many times. 2.)Freeze your shapes after you cut them! Most bakers will chill their dough prior to rolling but I find that I have more freedom rolling right from the mixer. I carefully use an offset spatula to transfer them to my baking sheet and then freeze so they hold their shape and bake evenly. #3.) CUT OUT EXTRA, at least one extra of each shape. Trust me, there will be a time you mess up, or drop a cookie, or miscount. Those extras always save the day! The magic word for Macarons is MATURE…well that and a few others like feet and skin and some more weird key words 🤣 But seriously, did you know that Macarons are better with age, of course with proper storage! Macarons need to mature, in that the filling needs to settle into the shell both for flavor and texture. For our Mac’s a minimum of 24 hours is needed for them to really take on that filling flavor and the perfect mix of crisp, fullness and chewy texture! If you’ve ever ordered our Mac’s, you know that they keep in the freezer amazingly and you only need to take them out a half hour or so before serving to come to room temp. Yes they’re a labor of love, but once you have em down, they’re rewarding in so many ways!
